Our Milling Process

Daybreak Mill has a traditional milling process that has stood for generations. We slowly and steadily grind the flour to preserve the nutrients. Most mills use a quick milling process involving speed rolling and hammering that will heat the grains and inevitably damage the nutritional value. 

After we slow mill our delicious flour, to ensure longer shelf life, the flour is then run through a sifter to emulsify the oils and reincorporate them back into the grain. This means the flour will include depth of flavor and texture when used for baking.

  • 100% Whole Wheat Flour
  • With 100% whole wheat intact, this is one of the most nutritionally dense flours we offer. Also made with Selkirk Red Spring Wheat right from our farm, we recommend this flour for whole wheat bread the whole family will love.

  • Prime Organic Einkorn Flour
  • Einkorn flour is known as “single-grain” flour. This pure and simple grain makes a delightful flour that can be used for muffins, cookies, pasta, pizza, and more. It is packed with vitamins and minerals and will leave everyone satisfied and smiling.

  • Spelt Flour
  • Pure and organic, spelt flour is most similar to whole wheat flour. High in protein and moderate gluten, this flour is used for all kinds of baking including desserts and bread. Spelt is unique because it contains such high amounts of nutrients and is extremely low in fat.

  • KAMUT Khorasan Wheat Flour
