Wild Rice Salad

Wild Rice Salad
1 cup uncooked wild rice
1/4 cup toasted pine nuts
1 sml red onion
2 cloves garlic
1 sml apple
1.5 cup bit size cooked beets
1 Tbsp djion mustard
3 Tbsp grapeseed oil
1 tsp cane sugar
2 Tbsp vinegar
2 tsp
Salt and Pepper to taste
  1. Bring 3 cups of water to a boil, adding wild rice. This will take around 45 minutes to cook.
  2. Meanwhile, saute onions and garlic until just translucent.
  3. Chop apple and cooked beets into bit size pieces.
  4. Once rice has cooled (or not if serving warm) combine all ingredients.

To make dressing,

Combine all ingredients into a jar and shake, shake, shake!

Pour over salad, to taste.
