Einkorn Salad with Immune Boosters

 


Ingredients

2 cups dried Daybreak einkorn
1 large red pepper chopped
1/2 large red onion chopped
1 field cucumber chopped
1/2 cup whole green olives
1/2 cup goat feta cheese (optional)

Dressing

1/4 cup Apple Cider Vinegar
1/4 cup sunflower oil
2 large garlic toes
2-3 heaping tbsp raw honey
Salt + Pepper to taste

Cook einkorn with five cups of water until einkorn is cooked (approximately 45 minutes). While einkorn is cooking chopped and mix your vegetables. Rinse einkorn grain with cool water and set to cool in the fridge. Mix einkorn with vegetables and pour your blended dressing mix on top. Sprinkle with goat feta and serve chilled. Enjoy!
