Dill Pickle Pasta Salad

We love this pasta salad!  We have made this vegan before by switching out the cheddar cheese for soy, using vegan mayo and coconut Greek yogurt.  It's equally delicious made both ways!

4 cups cooked Einkorn Pasta

1/2 cup pickle juice

1c chopped pickles

3/4c cubed cheddar cheese

3 - 5 chopped green onions

2 tbsp chopped fresh dill

Dressing:

2/3c mayo

1/3c plain Greek yogurt

1/4 tsp paprika

4 tbsp pickle juice

1/2 tsp cane sugar

1/2 tsp dried parsley

1/4 tsp cayenne pepper

Salt and pepper to taste

Toss pasta in 1/2c pickle juice and let stand while you prepare the dressing.  Combine all ingredients for dressing, then pour over pasta.  Add the pickles, cheese, onions and fresh dill and mix well.  Best if left to sit in the refrigerator for one hour before serving.

This recipe is a perfect fit for summer gatherings!

  • Oh Yum!! Wish I’d seen this last month when they dill was growing. Will try it with dried dill.
