Grain has been getting a bad rep lately. Maybe it is rightfully so when it comes to certain types of grain or grain products. A loaf of white, pillow-soft bread probably isn't doing any good for you. You're going to burn through all of the empty carbs in no time and be left hungry sooner then you should be. Although enriched refined grains have had some vitamins and minerals added back, they're still not as healthy or nutritious as the whole versions.
I know whenever I used to hear the term "whole grain" my brain pictured bread or pasta. I honestly had never even thought about the grains that flour is made from, let alone that you could cook it up and eat it like rice.
So what makes a whole grain so worth our while? Well, whole grains contain many compounds that may protect against chronic disease. These compounds include phytate, phyto- oestrogens such as lignan, plant stanols and sterols, and vitamins and minerals.
Whole grain kernels have three parts:
- Bran: This is the hard, outer shell. It contains fiber, minerals and antioxidants.
- Endosperm: The middle layer of the grain is mostly made up of carbs.
- Germ: This inner layer has vitamins, minerals, protein and plant compounds.
There are so many different kinds of grain :
- Hard Red Spring Wheat
Just to name a few. Not only are they all packed with their own individual benefits but they each have their own flavours and textures. Kamut has plump, chewy grains that are so delicious on greens. It also has higher levels of heart-healthy fatty acids than most grains.
Einkorn is an ancient grain dating back to 10,000 BC in Turkey. The grain itself is much smaller than wheat and has a nutty flavour. Lately, I've been really into barley. Who knew it was so good outside of soup. Probably a lot of you, but not me!
We decided to whip up some grain bowls for lunch last week. They are the perfect vehicle for getting your greens, proteins, and good fats. Not only that, they can be fun! You can set out your ingredients the same way you would a taco station. If you have kids, let them build their own!
Fish, pork, egg, or tofu. Pistachios, almonds or toasted pecans. You can make a sauce ahead of time or even use a store bought. If you use Einkorn, not only are you getting a ton of minerals and a full protein, it is also an easily digestible grain because it is much lower in glutenin and gliadin than today's modern grain. They are the components that make up gluten, causing some people grief.
