Today's wheat is nothing like what we ate thousands of years ago, but einkorn comes pretty close!
Einkorn contains far higher levels of protein, fatty acids, phosphorus, potassium, B6, lutein and beta-carotene.
Einkorn flour is characterized by high protein, high ash, and very high carotene content. Carotene is the pigment found in carrots and other vegetables that is important in the diet as a precursor of Vitamin A. It also offers small flour particle size when compared to modern bread wheat's. For thousands of years it has been referred to as 'the staff of life'.
Einkorn is the most genetically primitive and ancient form of cultivated wheat. It is hearty, delicious and beneficial to your health. We could go on and on to tell you about the health benefits of einkorn, but no one could do that better than our customers. Recently we held an anonymous survey and were astounded by the claims made about the change in people's lives after they switched to einkorn flour.
