Lentils

Lentils are a great source of protein and iron, making them a smart choice for vegetarians.   When cooked, they will take on the flavors of whatever you are cooking with (sort of like celery or eggplant).

Quick Facts:
-Lentils contain virtually no fat – they fill you up, not out!
-Lentils also have a high content of magnesium.  
-Lentils are a great choice for pregnant, menstruating or lactating women as they will help restore sufficient iron to the body.  Growing children and adolescents also need lots of iron to help them, well, grow.  Calling all women and children: Eat lots of lentils!

How to Cook

Ingredients
1 cup Lentils
3 cups of water

  1. Cook on a stove top. Be sure to use a large enough saucepan as the lentils will double or triple in size. Bring to a boil, cover tightly, reduce heat and simmer until they are tender. For whole lentils, cook time is typically 15-20 minutes.
