Einkorn is being rediscovered today as a healthier alternative to modern day wheat as it is twice as high in protein and trace minerals. Einkorn is a hulled wheat, making it easier to keep from chemical contamination when grown organically as the hull protects the kernel throughout the growing season.

WHERE TO BUY?
I have the same question as above. My sourdough recipe calls for strong flour, (higher in gluten/protein). Which of your flours are higher gluten?
I have the same question as Kimberley – looking for white flour with higher protein for cinnamon buns.
Hello,
I am curious if you have a white flour that contains more protein that your soft white flour. I would like to use white flour for bread making.
Thank you and I look forward to hearing from you. Thank you for providing the ancient art of flour during these uncertain times.
