1 Tbsp butter
1 medium onion
2-4 cloves of garlic
1 pkg mushrooms
2c cooked einkorn
2 bouillon cubes (we liked mushroom & onion)
green beans or other veggies of your choice
Soy sauce to taste
Begin by cooking einkorn as per directions on package. Add bouillon cubes to water while einkorn is cooking.
Next up, sautee the onions and mushrooms in the oil and butter. When the onions are fragrant, add the garlic. Trim the ends off your beans and cut them in to bite sized pieces. Add them to sauteing veggies.
Combine the cooked einkorn and lentils with veggies in a serving bowl. Add soy sauce and combine. While still warm, serve topped with goat or feta cheese. Crumbled nuts like cashews or almonds are a great addition as well.
