Turmeric Barley Soup


2 cups Barley

4 turmeric roots (mashed in your food processor)

4 tbsp EVOO

2 large parsnips

2 large carrots 

2 large handfuls of kale

2 tomatoes

4 toes of garlic (minced)

3 vegetable bouillon cubes

8 cups of water

Himalayan Salt to taste


Place oil and minced garlic in a large pot, saute for about 3 mins.  Add in minced turmeric, saute for 2 minutes. Add everything else, except kale.  Cook slowly on low for 1-2 hours.  Add in kale during the last 15 minute of cook time.  Enjoy!!
