- 1 cup uncooked spelt
- 3 cups water
- 1 bullion cube
- 1 can of diced tomatoes
- 2 cups of roasted cabbage
- 1TBSP dried basil
- 1 TSP dried oregano
- Salt and pepper to taste.
After giving your Spelt a rinse, add it to a pot with your water and bullion cube.
Bring the water up to a boil and then turn the heat down to simmer until nearly all of the water is absorbed. That will take roughly 30-40 minutes.
Next up, add your can of diced tomatoes, spices and cabbage.
(If you don't have leftover cabbage to use up, simply cut a few "steaks". Rub them down with your favourite oil, salt and pepper, then roast at 425 for about half an hour.)
Turn the heat down to low and toss on the lid.
