Einkorn Mushroom Risotto
Yield:
Ingredients
3/4c lentils
3/4c einkorn
1 large package mushrooms (any kind will do)
1 medium yellow onion
5 cloves garlic, minced/crushed
8-10c vegetable broth, or 8-10c water + 3-4 veg cubes
3 bay leaves
Salt & pepper to taste
Instructions

Sautee garlic & onions over medium heat.  Combine with all other ingredients in medium crock pot and cook on low heat all day.  For faster cook time, start on high heat for 1-2 hours, then turn down to low heat for remainder of day.
