1 head broccoli, cut into florets and finely chopped
3 cooked & chopped chicken breasts (optional) (humanely raised/local is best!)
Salt & pepper to taste
2 tbsp unsalted organic butter
2c milk of your choice (cream would make it extra indulgent)
1 1/2 c shredded cheddar cheese
1/3 c plain Greek yogurt
Preheat oven to 350F and lightly grease a 9x13 baking dish. In a saucepan of 2 cups water, cook quinoa according to package directions. Within the last 5 minutes of cooking, add broccoli on top and steam until tender-crisp.
Melt butter in a large skillet, then whisk in flour until lightly browned, about 1 minute. Gradually whisk in the milk and cook, stirring constantly, for about 3-4 minutes or until slightly thickened. Stir in the quinoa, broccoli, chicken (if using), cheese and yogurt. Season with salt and pepper, then transfer to baking dish. Top with more shredded cheese and bake for 5-10 minutes, just until cheese is melted. Easy, peasy, cheesy casserole!
NOTE: This would work with 1 cup of cooked einkorn as well, or any other cooked grain/rice you might have on hand.
