Strawberry Coffee Cake

*Preheat oven to 350

*Cooking Time 45-50 mins

*Pan size 9x13 inch

Ingredients:

1 1/2 cups cane sugar

3/4 cup grapeseed oil

2 eggs

3 cups Daybreak Mill Organic Extra Light Pastry Flour

1/2 tsp salt

1 1/2 tsp baking soda

1 1/2 cups coconut milk + 1 Tbsp lemon juice

1/2 tsp almond extract

3 1/2-4 cups chopped fresh strawberries

Topping:

1 cup cane sugar

2 tsp cinnamon

1/4 cup butter, melted

Cream oil, sugar, and eggs.  Combine dry ingredients and add alternately with the soured coconut milk and almond extract.  When smooth, add the chopped strawberries.  Spread into a greased 9x13 inch pan.  Combine topping and drizzle on top of the batter.  Bake 45-50 minutes or until the top springs back when touched.
