Double Chocolate Spice Cookie
Yield:
Ingredients
1/4c butter
2oz(250g) dark chocolate
3/4c cane sugar
1/4c cocoa powder
1 egg
1/2 tsp salt
1/3c chocolate chips
3/4c EINKORN FLOUR
1/4 tsp baking soda
3/4 tsp cinnamon
1/4 tsp black pepper
Instructions
Preheat oven to 325F.  In a small heat proof bowl set over a sauce pan of simmering water, melt coarsely chopped dark chocolate with butter.  Let cool slightly, and set aside.  Whisk together the flour, baking soda & spices.  In a separate bowl mic sugar, cocoa, egg and salt until smooth and thick.  Stir the melted butter and chocolate in, then mix in dry ingredients.  Place 1" balls of dough onto an ungreased cookie tray and bake for 15 minutes, rotating halfway through.  The cookies should be flat with a cracked surface.
