Makes approx 30 cookies
Ingredients:
1 1/4 cups of Einkorn flour
1/2 cacao or cocoa powder
1 tsp baking soda
pinch of salt
1/2 cup soft butter
3/4 cup cane sugar
1/4 cup coconut sugar (or brown sugar)
1 egg
1 tsp vanilla extract
Buttercream Filling:
1/2 cup soft butter
1 3/4 powdered sugar
1 tsp vanilla

Put the butter into a mixing bowl and beat on high speed until creamy. Add granulated sugar and brown sugar and mix until well combined. Mix in egg and vanilla extract.

Add the flour, cocoa powder, baking soda, and salt to the mixture and stir gently before mixing on low speed until combined

Cover the dough and chill for 30 minutes.

Preheat oven to 350 degrees F.

Line baking sheet with parchment paper.

Roll the dough into small, teaspoon sized balls and place on cookie sheet. I like to bake about 15 at a time.

Slightly flatten cookies with the back of a spoon.

Bake for 8 minutes. They will harden as they cool.
For the Filling:-
Beat the butter until it starts to become fluffier.

Add powdered sugar and vanilla and mix for 1-2 minutes, until smooth.

Once the cookies have cooled, its time to make a sandwich!
If you make the icing ahead of time, make sure you pull it out to reach room temperature before icing.
