Chocolate Covered Buckwheat
2 cups semi sweet chocolate chips
2 cups buckwheat groats
1 tsp vanilla
pinch of salt
First off, you will want to toast your buckwheat in a dry pan. Just until you can start to smell them. Once they are good to go, you can melt your chocolate. I prefer in a metal bowl over simmering water. You have more control over the melt. Combine the chocolate and buckwheat with the vanilla.  Spread onto pan covered with parchment paper, sprinkle top with salt, and place in freezer for 10-20 minutes.  Remove from freezer, break into bite-sized pieces, and enjoy!
