1 1/4c pastry flour
1/3c unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
2 tbsp coconut oil
1/3c honey or agave nectar
1 tsp vanilla
1 whole egg plus 1 egg white
1c shredded, peeled zucchini
1/4c unsweetened applesauce
1/2c unsweetened almond milk
1/2c chocolate chips


 Preheat oven to 350F. Squeeze shredded zucchini of excess water. In medium bowl whisk flour, cocoa powder, baking soda, and salt - set aside. In a electric mixer bowl combine coconut oil, honey, vanilla, egg, egg white. Mix on medium - low until smooth and combined.  Add zucchini, appplesauce and almond milk. Mix again. Slowly add dry ingredients. Mix until combined, gently fold in chocolate chips. Pour batter into greased muffin tin. Bake 22-25 mins or until toothpick inserted comes out clean.
