Einkorn Spinach Skillet Cornbread
Recipe from The Einkorn Cookbook
Yield:
Ingredients
For the Spinach:
1 tbsp bacon grease
4c chopped spinach, packed
1/2 tsp salt

For the Cornbread:
1 1/2c Prime Einkorn Flour
3/4c cornmeal
1/2c coconut sugar
1 tbsp baking powder
1/2 tsp sea salt
2 eggs, beaten
3 tbsp honey
1/2c plain yogurt
1/4c water

Instructions

Preheat oven to 450F. Heat bacon grease in 10 inch cast iron skillet over medium heat. Add spinach and salt. Cook until wilted, approx. 5-10 mins. Remove from heat. In a large bowl combine einkorn flour, cornmeal, coconut sugar, baking powder, and salt. In a separate bowl combine eggs, honey, yogurt, and water. Add wet mixture to dry. Pour batter evenly over cooked spinach. Decrease oven temp. to 375F and place skillet inside. Bake 15-20 mins. Let cool and serve with butter.
