Einkorn Beer-Cheese Bread
1 tbsp olive oil
1/2c finely chopped yellow onion
1 tsp black pepper
1 garlic clove, minced
3 cups einkorn flour
3 tbsp sugar
2 tsp baking powder
1 tsp salt
1 cup shredded cheddar cheese
1 bottle Mill Street organic beer
2 tbsp melted butter or olive oil, divided


Preheat oven to 375.  Heat olive oil in small skillet over medium-low heat, and sautee onion until browned.  Add garlic and pepper and cook for 1 more minute.  Next, combine flour, sugar, baking powder and salt in a large bowl and make a well in the center.  Add onion mixture, cheese and beer and stir until just moist.  Spoon batter in to a greased loaf pan, and drizzle one tablespoon of melted butter or olive oil over the top.  Bake for 35 minutes.  Drizzle remaining butter or olive oil over bread, and bake for an additional 25 minutes or until a toothpick inserted in the middle of loaf comes out clean.  Cool in pan for 5 minutes, then transfer to a wire rack.  Enjoy!
