Barley Soda Bread
Yield: 1 loaf
3 cups Barley flour
1/2 cup wheat bran
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cups buttermilk
1 omega 3 egg
1/3 cup cane sugar

Preheat oven to 375F. In a large bowl stir together flour, bran,baking soda, baking powder,salt and sugar. In another bowl whisk together buttermilk,egg and add to flour mixture ,stirring gently until mixture forms a soft sticky dough. Turn out onto lightly floured surface knead dough gently into ball. Place on floured baking sheet. With a sharp knife cut large X in the top of the loaf. Bake for 40 mins or until golden texture inserted comes out clean.
Makes one loaf
Variation: Mix in 2 tbsp sunflower seeds or sesame seeds , or 1/3 cup chopped fried apricots along with the flour.
