Rhubarb Coffee Cake Recipe
A truly delicious cake!
yield: 1 cake
3/4 grape seed oil
3 cups Pastry flour
.2 tsp salt
1.5 T baking soda
1.5 cups sour milk
.5 tsp vanilla
3.5 - 4 cups cut rhubarb
1 cup brown sugar
2 T cinnamon
1/4 cup butter
Cream oil, sugar and add eggs.
Combine dry ingredients and add alternately with the sour milk and vanilla.
When smooth, ad the cut up rhubarb. Spread into a greased 9x13 pan.
Combine topping and spread on top of batter.
Bake at 350 for 45 minutes, until top springs back when touched.
